Gluten and Dairy Free Oatmeal Cookies!
These are one of my favorite cookies of all time. They are the kind of cookies that I feel comfortable taking to parties and not worrying that people will think they got tricked into eating the weird gluten free junk. The only bad thing about these cookies is they never last more than a day at our house. Enjoy!
Gluten and Dairy Free
Oatmeal Chocolate Chip Cookies
1 1/2 cups gluten free oatmeal
1 1/2 cups almond flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 cup oil
1/3 cup honey
1 egg
1 tablespoon vanilla
1/2 cup dairy free chocolate chips (or raisins)
1. Preheat oven to 350 degrees F.
2. In a large mixing bowl, mix together the first 5 dry ingredients.
3. In a separate medium mixing bowl, whisk together next 4 wet ingredients.
4. Stir the wet ingredients into the dry ingredients, then fold in the chocolate chips. Refrigerate the dough for 20 minutes. Place heaping teaspoons of dough onto cookie sheet, leaving 2 inches between each cookie.
5. Bake for 10-12 minutes. Cool, then enjoy!
